I have a machine that had DDR 3rd mix version korea2, it started to fail and they installed the DDR Extreme with a cd of installation it did not take anything, it still has its original cassette of the 3rd mix .inclusive I have the 3rd mix game CD.
There is some way to reinstall the 3rd mix korea version 2

think he wants to taken a 573 with extreme and downgrade to 3rd mix korea ver2 witch is only doable with a bootleg cart

If it has the same security cart as it did when 3rd Mix was initially installed on it, you should be able to reinstall 3rd Mix on it no problem unless a bootleg bootrom was used, so you couldn't roll it back in that case.
Could you provide pics of the board inside the 573 to see what bootrom you have?

From the pics you provided it looks like you still have the original bootrom, so that's good.
After searching around, what you'll have to do is put the 3rd mix disc in but not the security cart. It will install the game and give an error, but after turning it off and reinserting the cart, you should be able to play it again.

Sorry for that.
After asking around, to reinstall it you'll actually have to put in the security cart but flip DIP Switch 4 on the 573 before turning it on. Don't know if it will give you any errors once it's done installing, but after it's done just reboot it, flip DIP Switch 4 again, and it will probably be playable again.
Hope this works. If you're on Facebook, there's a group here that can help you out with any other technical issues. There aren't a lot of us left on this forum that are familiar with arcade hardware.

then it means that the DDR Extreme installation disc flashes the original bootrom and the 3rd mix will not work anymore

Installing extreme probably affected the security cart, not the bootrom.
Did you try installing with DIP switch 4 flipped both ways? If it gives the same message, then your security cartridge must be corrupt and you can't put 3rd mix back on it legitimately.
There are disc images out there that can work without the security cart, but I can't share them publicly on here.

As far as I’m aware there’s nothing you can do. When I had my cab and I tried to install 5th over my extreme security cart it was no good from that point on and I had to find a bootleg to get extreme back

We already kinda explained, if your security cassette was over written you probably can’t go back without finding a bootleg version of the game online somewhere that will run without the security cassette. I’m fairly sure nobody else has found a way of restoring a security cassette because there’s be next to no point with how common bootleg cabinets are now! (Plus most private cabs just run stepmania nowadays anyway)

Dancefreak is right, Jesaltori. You're pretty much at a dead end/impasse. You might as well just mod the machine to run SM.

I own several System 573 and cassettes. Long story short, a used cassette won't work on any other system. It is tied to the System 573 that it was first installed with. Cassettes almost always get flashed and damaged when installing an invalid update.
Many versions of DDR remove the cassette copy protection. For the non-Solo machine, I suggest getting DDR Extreme Clarity. It will add Marvellous timing, Slow/Fast indicators for non-Marvellous steps, and it has no copy protection.
