The title says it all. Any of the sub-series will count, whether it be Classic, X, Zero, ZX, Legends, Battle Network, or Star Force.
For myself, I'd pick Zero 1 and 2. The Zero series suffered from intense screen crunch (especially #2), as well as more challenging levels and bosses.
The grading system is also the most punishing thing on earth. If you want a consistent A-rank, you need to beat each level with little damage, incredibly fast time, no deaths, and no Cyber-Elves. It gets even worse in Zero 2, where some missions have additional objectives that you have to clear for your rank, like fending off enemies while Ciel decodes a missile or finding and destroying all the computers in a given level.
Zero 3 and 4 could also count, but I think they're much easier because they let you use some Cyber-Elves without any drawback, while 1 and 2 would lower your rank regardless. Zero 4 also introduced both Easy mode and the Weather system, so you could always choose to take the easier route through levels.
