I’ve made a list of specific things I noticed on DDR SuperNOVA machines, as well as the differences between the patched SuperNOVAs, and the non-patched SuperNOVAs:
Note: the things listed are mostly things that are not obvious to people who don’t play it often, or who don’t look at the machine that closely. I am not listing things that were a main part of a certain video (i.e. “The different arrow skins available in SN2”), or things that are obvious about the SuperNOVA machine (i.e. the flashing lights in both bass speakers)

SuperNOVA machine:

-Has a flat marquee holder, unlike previous DDR machines (this only applies to America). American SuperNOVAs have a flat marquee holder, whereas Japanese SuperNOVAs have the rounded marquee holder.
-Has a better T.V. – it’s definitely much closer to a “flat-screen” than previous DDR machines.
-Sound seems to be better on this one, probably due to the fact that it’s running off of a PS2, rather than a PS1. (I’ll get into that later)
-Both SuperNOVA and SuperNOVA 2 have “Produced by Yoshihiko Ota” in the marquee.
-The image on the screen is much clearer and better than before.
Contents inside of a SuperNOVA machine (note: this is strictly from MY OWN knowledge):

-It’s running off of a plain, old PS2 (not a Slimline PS2 – a normal old one) with a hard drive, which supposedly makes loading times faster than the home version. It also has an adapter board to connect the pads, lights, etc. to the PS2.

Differences between patched SuperNOVA machines and unpatched SuperNOVA machines:

First, just to make things clear, the first version of SuperNOVA released was criticized because people complained about poor syncing and timing of the arrows in relation to the beat of the song. Later, Konami released a “patch”, which is another disc that fixed those timing issues, as well as changed some other things:

-Goodbye “bang”, hello “swoosh”. In non-patched SuperNOVAs, whenever you passed, or cleared a song, it used to not make any noise as the sci-fi doors were closing, and when the to sides of the door met, they made a “BANG!” sound. Now, on “patched” SuperNOVA machines, as the sci-fi doors close, the make a “SWOOSH!” sound as they’re closing, but don’t make any sound when they hit each other.
-As you’re browsing through the song wheel, on non-patched SuperNOVAs, when you scroll from one song to another, it’s slower scrolling in between each song in the song wheel than in the patched one. The patched one also slightly speeds up the “metal-grinding” sound that it makes when you scroll from one song to another.
-It seems that on the patched SuperNOVA, they took some features from the home version of SuperNOVA, such as the “swoosh” when the doors close during a Challenge/Nonstop course. One thing they added that was not on the home version was the faster scrolling of the song wheel.
-After you select a song on patched machines, it takes longer for the sci-fi doors to close to say "First Stage" than in un-patched machines. It also takes slightly longer to load before the actual gameplay because in un-patched machines, it used to take less time to load for the bakcground with dancing characters, and more time to load for background movies. In the patched machine, they fixed the difference in loading time by having both backgrounds with dancers and with videos having the same load time. My honest opinion on this is that: if you prefer faster loading, even if it's a half-second difference, un-patched machines are the way to go. Unfortunately though, that also comes with slower scrolling speed of the song wheel, and a bunch of songs that are off-beat.

Differences from SuperNOVA to SuperNOVA 2 (of the videos I’ve seen):

-Loading time in SuperNOVA took about 2-3 seconds, whereas in SuperNOVA 2, it takes about 3-4 seconds.
-They kept the same scrolling speed on the song wheel from the patched SuperNOVA.
-When you select a song in SuperNOVA 2, the “Options” menu is blue, like its color theme, unlike SuperNOVA’s red “Options” menu like its color theme.
-When you clear a song, it usually waits a couple of seconds, says “Cleared” with people clapping in the background, and then the “new-looking” sci-fi doors close – in other words, it takes longer for them to say “Cleared” and get on to your score than in SuperNOVA. In videos with it's own unique background (not the background with dancing characters), it takes a shorter time for them to show "Cleared", and it also takes a shorter time for them to close the sci-fi doors from when it says "Cleared" than if there were dancing characters in the background.
-It takes about 1/2 second longer for the song wheel to load after you clear a stage, and press the button after you got your score than in SuperNOVA, probably due to the massive song list of 350+ versus SuperNOVA's 301 songs.

DDR home version versus arcade specification:

-In the home version of DDR Extreme and before that, when the song starts it has a "stationary" picture before the movie starts to begin - and when the song ends, it goes back to the stationary picture there was at the beginning. In the arcade version of SuperNOVA, the movie immediately starts and ends with no stationary picture - the movie immediately starts, and ends without that "picture".
-When you fail in a home version before SuperNOVA, *right* before it shows "Failed", it shows that that "stationary" picture again, as if it's "resetted", whereas in the arcade version of SuperNOVA, the doors just close in the middle of the movie saying "Failed", without going back to a "still" picture before the "doors" close.

General:

-In SuperNOVA, and DDR Extreme (could be in DDRs before that), when it grades the specific arrow that you've stomped, the arrow will have either a green glow when it hits the meter, which means "Great!", a yellow glow, which means "Perfect!!", and a white glow that also shows "Perfect!!", but actually means "Marvelous!!". In SuperNOVA 2, they made the white glow "Marvelous!!" during normal gameplay now instead of just in Nonstop and Challenge (Oni) modes. They also added the same "sparkle" from when you used to get 100 combos to each time you get a "Marvelous!" arrow in SuperNOVA 2. In SuperNOVA and Extreme (and possibly previous DDRs), you used to get a sparkle each time you continued the combo from getting 100 combos. The sparkles used to be either green, yellow, or white, but now in SuperNOVA 2, they're only white, because you only get that sparkle when you get a "Marvelous!".
-When you are scrolling through the song wheel one song at a time, the banner loads instantly. However, if you keep holding the button, and let the song wheel scroll fast, the banners don't show up as they don't have time to load. When you stop scrolling, the banner immediately loads for that song. This is not the case with the un-patched machine. On the un-patched machine, the banners load instantly as you scroll one song at a time or hold down the button to keep scrolling fast. This is probably because of the fact that the scrolling speed from one song to the next was slower than in the patched one, which gives it more time to load. As in the patched version, the same rules apply for the loading of banners when scrolling in the song wheel for DDR SuperNOVA 2 AC. All of the home versions of DDR load the banners fine no matter how you scroll. This is probably because the home versions don't have as many songs as the arcade versions.
