Audacity doesn't support videos full stop. You'd be best using a program like VirtualDub to strip the audio.

Push Record then play your video. Make sure it's on stereo mixer.

That works too, but when you re-encode it back to mp3, you're gonna lose some quality.

I wouldn't. I was pretty bored one day, and tried to use Audacity to rip an mp3 from a video. What I basically got was 90% static and 10% distorted audio from the video. It was certainly not pleasing to my ears...

Zamzar can convert .flv to .mp3 without reduction in quality, so I just do that.
