Perhaps because dedicabs, especially well treated ones, are exceptionally rare (last time I checked) and usually cost $10,000. Although, to be fair, I saw one sell for $5,000 once too.
Anyways, any luck on finding a machine for your local arcade? I'm still searching around craigslist and ebay for stuff, but honestly, everyone is overpricing their extreme machines

Bear in mind that ITG2 machines sold for $5000 brand new from Andamiro.

If someone wants to sell it for what it's worth, they'll get maybe $2000 for it, $3000 if it looks and plays like new. If someone wants to sell it as a collector's item... the first thing you don't do is mod it. He openly admits to changing, re-facing and hacking the machine. Doesn't matter if he put a glowing fish tank in the speakers, he lost all collector value by doing that. I would have honestly told him to return everything to the way it was stock (If it were even possible to do)... and for that, it wouldn't even be worth five grand.
I noticed. Did you also see the upgraded ITG2 for ~$500? Yeah, put a bid on that, honey.

The thing is, they don't make ITG2 Machines anymore, and only a few dedicabs were produced in comparison to convertacabs. And, boxors still exist (as you have said) and are still more available compared to the now dead ITG2 Machine market. I heard dedicabs were of better quality then converted ones, but they really aren't worth twice as much in my opinion.
Anyways, the actual market value of a very good condition ITG2 cab seems to be right around $10,000. And, Converted ITG2 machines seem to be right around $5,0000. Thats just the way the market is. Yes, it is really dumb to overcharge like that, but it is what it is. All you can hope for is a reasonable price on a reasonable machine, which will eventually come up. It may take a year or two, but they do come up. In fact, just a few weeks ago, I saw a Extreme cab go for $1,500 and another for $1,800 (This was before I saw your post, mind you).

I'm glad I'm not the only one that realizes that. Need to find a way to bust that bubble. 
ITG2 cabinets are WAY better than DDR cabinets (upgradicabs) because they were built by Andamiro. However, if you look at them you realize that ITG2s are slightly altered Pump It Up GX cabinets. Which you can still find all over the place. And the PCB is almost exactly a MK6 (or 7 I can't remember right now) those are also plentiful. With a little know-how you can cobble together a replica ITG2 machine of the same build quality for a few thousand in parts.
The biggest difference is the stage. Though I've been looking into what kind of effort it would take to convert a Pump stage into a DDR-styled stage. Or leave it like it is and make a ghetto Pump PRO machine using OpenITG. :V
