Vista is basically a re-skinned version of XP with some features missing and some new ones added.
Windows 7 is basically a fixed version of Vista with newer, small things that prove Windows is going for Mac OS X's graphical UI.

I'll give you the WMP toolbar removal, that was pretty dumb, (although WMP is pretty lacking anyway) but there is Mini mode, and iTunes and WinAmp can do the same, with a few tweaks. (iTunesKeys is awesome)
But what exactly is wrong/missing with System Restore? You can still create custom points and it'll do it automatically when it installs Updates.
Things renamed:
StartSearch. It will find anything for you, including things in the Control Panel. This is probably my second favorite feature of 7.
Also, for many things in the Control Panel, you'll only have to learn the new name once and then change whatever settings you need, and never go back to there. If you really can't remember, that's what StartSearch is for.
Security Center did nothing more than Action Center - which is much, much better anyway.
Custom themes - meaning like Royale/Media Center Edition from XP? Rightclick Desktop > Personalize gives you most of that, and then if you click Window Color at the bottom of that screen, then Advanced Appearance Settings, was that what you meant?

I was talking about themes that I find on DA or those vistathemes/seventhemes websites, but Luna's good. Funnily, I can't seem to find the Advanced Appearance Settings on the Windows 7 Professional we have at the computer labs nor the Home Premium on my classmate's laptop.

It's probably disabled on the lab computers - but on Home Premium, it should be there... Unless maybe it's a Beta version?
As far as themes go, if you places their data/themepacks in the Windows\Resources\Themes\ folder, you may have to patch some files: http://deepxw.blogspot.com/2008/11/universal-theme-patcher.html

Hmmm I'm thinking if I should do a cosplay contest entry this Saturday at a gaming convention at my university.
