Ok, after much thinking, I've shortened my big list down to only 5. Obviously, if you've started work on others that aren't mentioned here, that's awesome. But, I made it easier I think. So, here goes:

Hey, Ben. I've noticed that in all of your packs, you've never had an "off-beat" chart, where all of the arrows are either 4th or 12th notes.
I'd like to challenge you to make this type of chart with the following song:
It starts out on-beat, but when she starts singing, it's very much off-beat, and plus I think you'll really enjoy the song itself.

Small update, it may be obvious I haven't done anything for a while; trying to find a host for my Speirmix packs as Mediafire pulled everything + college work + DRAMA = not good production! I DO have4 5 sims almost ready; one is entirely ready but is missing the video, stuff shall be posted soon!

Ahh Remedy yes! YEARS ago I stepped that but I lost all my old files and that was one I missed! I'll try and squeeze that in, I'm sure it'll be no problem!
