I would like to change it from NOVICE, EASY, MEDIUM, HARD and EXPERT to BEGINNER, BASIC, DIFFICULT, EXPERT and CHALLENGE.

Open the en.ini file in the Language folder of the theme,
[CustomDifficulty]
Beginner=BEGINNER
Easy=BASIC
Medium=DIFFICULT
Hard=EXPERT
Challenge=CHALLENGE
