Comparing simfiles from SuperNova 2 (AC) and simfiles from Hottest Party 1 and 2, SN2's mp3s have Artists, Albums, Genres, etc. listed, while HP1 and HP2's do not.

They do, don't trust Windows to display it as it uses stupid hacked ID3 tags to make them show on Windows.
Use a different media player.

I'm using QuickTime.
And if Windows doesn't work for HP2, why does it work for SN2?

HP1 & 2 work with Winamp. All ID3v1 & v2 tags are shown.
EDIT: playing under Winamp 5.56 (file not altered in ANY way)

Because SN2 is tagged differently, using non-standard ID3 tags which is discouraged.
