When you sort by BeginnerMeter by default in StepMania 5 is it possible to do this without having numbered folders by default?

Not unless you set a certain preference regarding groups to Off or ABC Only in the preferences.

How do you turn groups off? Also is it possible to start on Beginner when the game begins with the default theme?

1. Go into "Themes" and look for your active theme's folder, and it's "Metrics.ini."
2. There should be a couple of lines for folder sorting methods; one for the complete list and one for the defaults. It'll say things like "TITLE," "ARTIST," "BPM," "LIGHT DIFFICULTY," etc. What you'll want to do is add the keyword "PREFERRED" to the list, and then select or default that.
What "preferred" does is arranges each setlist by light, arranges each light set by standard, and each standard set by heavy; similarly to early mixes like 3rd Mix, 5th Mix, or DDRMAX games, so they'll look similar to that.

The reason this came up is because I was using
But I was noticing it was arranging by alphabetical order, which I can not stand by default. The folders are gone, but the order is alphabetical. So I tried

But has it been added back to the list of folder sorting?
I don't think BeginnerMeter was ever supported, because it wasn't scoretracked in Memory Cards, either.

BeginnerMeter is indeed supported, but you have to change the preference MusicWheelUsesSections to Never to hide sections.
