Is there a way in which in my preferred sort, I can change a song's color? For example, let's say this is my list.
Himawari
I'M FOR REAL
iFUTURELIST (DDR VERSION)
INSERTiON(Machine Gun Kelly Mix)
INSIDE YOUR HEART
Jam & Marmalade
Keep On Liftin'
KEEP ON MOVIN' (DMX Mix)
KI SE KI (DDR edit)
Knock Out Regrets
Is there a way that I can change the first 4 songs to be in yellow, the next 3 to blue, and the last 3 to be green? Any help is appreciated!

Depends on your theme. I don't think it's possible in SM5 in general (although 3.9 supported a #COLOR tag in the .sm file standard iirc).
However, the CyberiaStyle and waiei themes use .ini files to control the appearance of songs in the songwheel, as well as some really cool extra stage stuff. But even those work on a per-folder basis, so I'm not sure you could apply such settings directly to a specific sort.

Just to add to this, #MENUCOLOR was the tag indeed, and the waiei theme actually does support that tag too in case it is present in a simfile.
