Is there a way in which in my preferred sort, I can change a song's color? For example, let's say this is my list.

Depends on your theme. I don't think it's possible in SM5 in general (although 3.9 supported a #COLOR tag in the .sm file standard iirc).
However, the CyberiaStyle and waiei themes use .ini files to control the appearance of songs in the songwheel, as well as some really cool extra stage stuff. But even those work on a per-folder basis, so I'm not sure you could apply such settings directly to a specific sort.

Just to add to this, #MENUCOLOR was the tag indeed, and the waiei theme actually does support that tag too in case it is present in a simfile.
