Looking at the extreme songlist the boundaries seem about right, but its weird how on euromix 2 every song had a rating that completely contradicts any sort of system, like i said earlier blondie girl being a 3 on beginner and a 1 on basic but there are faster songs with lower difficulties and slower songs with equal difficulties. Odd but i can only assume that because EM2 had a few inconsistencies with extreme that they must have changed the system between the two games and re-rated everything.
That being said, destiny beginner on that game is a 3 and its basic chart is a 2 apparently according to the database as well.
EuroMIX 2 is kind of a strange case. It's the first euro version with beginner ratings (afaik) and they rated those independently from the BPM system the other games previously used. From what I know, it's the only real exception to the BPM system, other than the Xbox games that didn't rate their beginner charts, and I'm not sure what the HP games did either. But for the mainstreamed AC games, that was what happened. So EuroMIX 2 had lots and lots of 3s on but there didn't seem to be much rhyme or reason.
To be fair EuroMIX 2 also changed foot ratings for other difficulties, like Vanity Angel 8 -> 9 and LOOK TO THE SKY 6 -> 7, but both of those make sense IMO.
And I also can't comment on doubles ratings because I don't know enough about doubles.
EDIT: so LTTS is one of my favorite DDR songs ever and I didn't know it was re-rated to a 7? i'm crazy. & Apparently CRASH and VANITY ANGEL are EuroMIX2-originals, so they were 9s because this is the first version they were on.

Yeah crash was a 9 and down rated to an 8 i think on extreme as was vanity angel, plus it had a hold note added. But yeah Euromix 1 had all 1 footer beginner charts throughout, Euromix 2 actually had ratings (and im 99% sure blondie girl was a 3 not a 2 ill have to double check because theres a cab somewhere nearby with it on). The PS2 games we got also seemed to follow the Euromix 2 styled ratings from what i remember for beginner. but thats a different matter entirely

I recall there being an X-scale Expert rated an 11 with the Challenge rated 5. This happened a lot with "X-edits".

Sakura comes to mind when I hear read these comments...Back in the day the Challenge was a nine footer with heavy mode being a ten footer...made no sense to me then and still doesn't now. Haha
