For me, I think it would be really cool to see songs from Pump it Up with DDR-style stepcharts. I'd be super curious on how they'd turn out.
It would feel like I'm playing StepMania with DDR gameplay and Pump songs.
Other than that, I would also find it cool if there was DDR BeatlesMIX.
And especially because I'm a fan of Three 6 Mafia and Wu Tang Clan, it would be cool to see DDR stepcharts of their songs.

There are actually quite a few simfiles on this site that are of PIU songs with DDR-styled charts! Why don't you give the simfile database a search? I'm sure you'll find what you're looking for.

I have a pack I got from the ITG spreadsheet, I think it was called PIU for ITG but I can check for sure when I get home. It’s pretty good depending on the difficulty you’re looking for.

I would like to see more packs that attempt to polish existing official charts by changing patterns to remove double-steps, adding missing fills, charting measure-long pauses, converting 16th notes to 24th notes where applicable, and fixing any note placement syncing issues that were never officially adjusted.
For example, the 2013-2014 series is overall better-charted than the X games, but there's still some residual awkwardness and double-stepping that was fixed in A onward. Bringing these older charts to modern DDR charting standards (or better) could be a fun project and give more comparative data on where the officials missed the mark.

I'd like to find a collection with a bunch of future funk music. Barring that, I'd like to create one myself, but I don't know how to chart yet. Hopefully in the summer I'll have the time to try my hand at one of the contests and learn that way.

I'd never think of that. That's genius. I personally want to see gangsta rap in StepMania.
