I've been playing jubeat (both japanese and european version), and I've already bested the extreme difficulty of Snow Goose. I heard that you can make your own charts for the stages via the jubeat lab, but I can't find the hardest edit chart for Snow Goose to try out.

It's very subjective really, you can find a chart that is just insane to the point that there is no merit to even trying due to the chart just being too stupidly hard to pass, then there are others that could be much easier than the original EXT chart but flow better (or worse) than the original chart.
Like I said, simply subjective, there is really no one 'true' edit that is harder than the EXT chart that you might like, I am sure there are probably a lot of edits done for it, but one that is 'harder' than the EXT chart is just up to you and the chart maker really.
