Based on my current skill level (able to pass most 3s and a couple of 4s), which would be a better rank to start with, 6-Kyu or 5-Kyu?

Well, there's no reason to start lower and get the practice in. That said it kinda depends on the individual mix but you might as well try 6 Kyu, at the very least for practice.

Yeah, at least try 6-kyu. You'll know if you're ready to graduate by the time you finish a couple songs.
