Touhou has amassed a large following considering its a doujin series and not commercial. There are TONS of bullet hell games similar to Touhou, and a quick search on google/youtube will steer you in the direction of finding some pretty good ones too.

As far as commercial stuff goes, if you're looking for easier stuff, I've heard Mushihimesama Futari and Dodonpachi Daifukkatsu/Resurrection are some easier ones. Both can be played on any Xbox 360 (Mushihimesama Futari is region-free, and Dodonpachi Daifukkatsu has a PAL release that can also be played on US 360s).For some easier doujin/PC games, there's the TWINS series (TWilight INSanity, TWilight refrAIN, Alternative Sphere), RefRain ~prism memories~, Crimson Clover (Simple mode), and Suguri and Sora if you're looking for something a little different.
If you aren't necessarily looking for something easy, there's also things like Ketsui, Dodonpachi Daioujou (and possibly Saidaioujou when it comes to 360 later this year), Battle Garegga, Battle Bakraid, ring^-27, Banshiryuu (part of the Seihou series), and Hitogata Happa. Also, ∀kashicverse -Malicious Wake-, Project Repliser, and Stella Vanity are probably really good, judging from their demos.
You forgot Hellsinker.
EDIT: Oh damn, ring^-27 is one of the best shmups I've ever played.

I was thinking about putting it, but I've only played it once or twice (before the English patch), so it wouldn't be good for me to recommend it. Shit how did I miss this thread (I don't care I'm bumping it yolo)
I've cleared next to all the regular games on normal 1cc (PoFV and GFW I think are left, maybe forgetting a couple) and have beaten a few EX bosses (Mokou, Suwako, Yukari, Ran) and am pretty damn close to Koishi and Nue. I guess right now I'm trying to capture all the spellcards on normal and beat some more EX bosses. Wanna try and get a no death run on one of the games soon on normal. Apparently considering how long I've actually been playing that's quite a lot of improvement lol.
Music wise, prismrivers theme is by far my favorite track of them all, but SA, TD, MoF and IN have pretty good music in them too for me (actually all the games do oops). Koishi may be evil as hell but damn is her theme music great.
Still though, it's all about Flandre.
